Ingredients required to make watermelon barfi
You will not need many things to make watermelon barfi. For this, take 3 cups watermelon pulp, 1 cup milk powder, half cup sugar, 2 tablespoons desi ghee, 1 teaspoon cardamom powder and a little chopped dry fruit. If you want to make it more healthy, you can also use jaggery powder instead of sugar.

Prepare watermelon mixture like this
First of all, take out the seeds of watermelon and grind its pulp in a mixer. Now put this pulp in a pan and cook on medium flame. Gradually its water will start drying up. When the mixture becomes slightly thick, add sugar to it and keep stirring continuously. Take care that the mixture does not stick to the pan, otherwise the taste may get spoiled.

Milk powder and ghee will give perfect taste
Now add milk powder and desi ghee in the pan. Keep mixing it continuously so that the mixture becomes smooth. Within a few minutes it will thicken and start taking a barfi-like texture. During this, add cardamom powder, which will increase both the aroma and taste of the sweet. When the mixture starts leaving the pan, turn off the gas.
Assemble and serve like this
Apply light ghee on a plate or tray and spread the prepared mixture. Add chopped dry fruits on top and press gently. Now let it set in the refrigerator for about 1-2 hours. When the barfi sets well, cut it into desired shapes. Cold watermelon barfi will double the fun of eating in summers.
