In the recipe of Cucumber Idli that we will learn in this article, we will use Idli Rava. To make this rava, rice is steamed and ground coarsely. The idli made from this becomes very soft and spongy. Saukyi Kadubu/Cucumber Idli
What are the ingredients required?
To make Soukai Kadubu, you need fresh cucumber (grated 2 cups), idli rava one and a half cup, fresh coconut chopped half cup, soaked gram dal 2 tablespoons, green chillies 2-3, handful of green coriander, curd 5-6 tablespoons or increase as per consistency, salt as per taste.
Cucumber Idli Recipe
- First of all, wash the cucumber and grate it without peeling it, because its peel also contains nutrients.
- Now transfer the cucumber to a big vessel. After this add idli rava and mix it with a spoon.
- Add chopped coconut and green chillies in a grinder jar and grind it also. This will become a coarse mixture.
- Now add soaked gram dal, finely chopped coriander and salt.

- Last of all, you have to add curd to it and then mix everything. Keep its consistency a little thick.
- You can also pour the prepared mixture into idli molds or bowls and then steam them.
- This idli is traditionally wrapped in banana leaves and steamed, which gives it an amazing taste. If you have banana leaves then use them.
- All the ingredients used in this idli are healthy and curd is probiotic, hence it is beneficial for your stomach also.

Serve hot idli with tomato and coconut chutney. To make this, add 1 to 2 spoons of oil in the pan. Fry 1 teaspoon chana dal and equal amount of washed urad dal in it. Then add dry red chilli as per taste. Add curry leaves and then add half a cup of grated coconut and fry. Lastly add 2 tomatoes (chopped), a little tamarind pulp and salt and cook for some time so that everything becomes soft. Cool and grind the chutney in a grinder. Heat oil in a tadka pan, add mustard seeds, curry leaves, asafoetida and temper the chutney.
