Difference between normal rabri and healthy rabri
Traditional Sitaphal Rabdi uses full-fat milk, condensed milk, sugar and large amounts of cream, which increases its calorie and fat content. Whereas in healthy Sitaphal Rabdi, low-fat milk, natural sweetness of Sitaphal and nutrient rich dry fruits are used. This retains the taste and creamy texture of rabri, but makes it more nutritious and lighter.
Material
2 cups low-fat milk 1 cup custard apple pulp 1 tbsp chopped almonds 1 tbsp chopped pistachios 1 tbsp chopped walnuts 1 tsp cardamom powder 1 tbsp chopped dates (optional) 1 tbsp roasted and crushed makhana (optional)
Method of preparation
Heat milk in a pan and cook it on low flame until it thickens slightly. Let the milk cool completely. Now add custard apple pulp in cold milk and mix well. After this add cardamom powder and all the chopped dry fruits in it. If you wish, you can also add dates and crushed makhana to it. Keep the rabri in the refrigerator for at least an hour. When it cools down, add some dry fruits on top and serve.
