Even though its ingredients may sound like it would be kheer, phirni is a completely different dessert. However, not everyone is able to make a perfect phirni. Some people complain that it becomes too thick and has a pudding-like texture. 50-100-1 liter formula

Chef Ranveer Brar says that while making Phirni, you have to be very careful about the proportions. He says that to make good Phirni, follow the formula of 50-100 and 1 liter i.e. the ratio of ingredients should not be disturbed.

For example, if you have taken 50 grams of rice then take 100 grams of sugar and you have to take 1 liter of milk. He says that this ratio is very important to make good phirni, because if the rice is too much then the phirni will become like halwa and if it is less then it will become like lassi.

To make Phirni, you need 100 grams rice, 1 liter full cream milk, 100 grams sugar (if you eat less sweets then 75 to 80 grams), 3-4 small green cardamoms (peeled and crushed), 10 to 12 pistachios (finely chopped), 10-12 threads of saffron. Now know the method of making Phirni.

How to make Phirni?

  • First of all, wash the rice and then soak it in water for 1 hour.
  • Take out the rice from water, squeeze it well and then grind it coarsely.
  • Now take a deep and heavy bottom vessel. Keep the milk boiling on low flame.
  • When the milk starts boiling, add ground rice to it and keep stirring it every 2 minutes.
  • Soak saffron in lukewarm milk for some time so that it gives good flavor.
  • When the rice is cooked, add cashew nuts, saffron and sugar to it. Then cook it until the sugar dissolves.
  • If the texture of Phirni becomes slightly thick then understand that it is ready. Add cardamom and turn off the gas.
  • If you want, you can serve it immediately or keep it in an earthen pot in the fridge to cool.
  • Serve Phirni garnished with pistachio shavings and enjoy yourself.
