What is the traditional method?
If we talk about pure desi ghee made in villages, then after churning the curd, butter is made from it and then desi ghee is made from it. Actually, cows or buffaloes are reared in most of the houses in villages. In such a situation, they have milk in large quantities. This is the reason why they churn the curd to make butter and desi ghee, but if you live in the city then the best way is to make desi ghee from milk cream. For this, take out the cream from the milk and store it in the refrigerator. When you feel that it is enough, make desi ghee. Now know the right method.

Put the curd or several creams collected in a deep vessel and then start churning it with a wooden spoon. If you do not have mustard seeds then you can use a hand blender. This makes butter very quickly. You have to churn cream or curd with mustard seeds until the smoothness starts separating completely. This is your finished butter.

How to remove butter?
When the butter is ready, it starts gathering on its own. It melts during summer, so add a little ice to it and then rotate it with your hands or a spoon. After this, make balls of butter and keep them in a vessel. If you have taken out butter from curd then keep the remaining buttermilk. You can drink it or use it in cooking.
How to extract desi ghee
Now you have to put all the butter in a thick bottom pan and then let it cook slowly on very low flame. You have to keep stirring it in between so that it does not burn. You will see that ghee will start separating from butter within some time. When the ghee comes out completely, turn off the gas and let it cool for some time and then filter it through a fine sieve or clean cotton cloth and store it in an airtight container. This desi ghee is pure and does not spoil for many months. You just have to keep in mind that even if you are making ghee at home, it is better to use cow or buffalo milk instead of packet milk.
