To make bitter gourd fry, you need 500 grams of bitter gourd, apart from this take 1 cup gram flour, half cup corn flour or rice flour. Two spoons of corn flour or rice flour will be required separately. Juice of 1 lemon. As per requirement, salt, chilli garam masala, coriander powder and turmeric.

- First of all, wash the bitter gourd and scrape the peel. Now cut the bitter gourd into rings or you can cut it into fingers.
- Take water in a big bowl. Add salt and lemon in this water and soak the bitter gourds in it for 15 to 20 minutes.
- Now take 1 cup gram flour and half cup corn flour. Mix basic spices like turmeric, chilli, garam masala, coriander powder in it.
- Also add some crushed red chilli and Kasuri methi to this mixture. Along with this, also add ginger and garlic paste to it.

- Now you have to prepare a thick consistency by adding water. This solution should not be too thin.
- Now take out two spoons of corn flour separately in a plate and keep it aside. Add a little salt and black pepper powder to it.
- Now squeeze the cut bitter gourds one by one and wipe them with a clean cloth.
- Heat oil in a pan. Coat all the bitter gourds with dry cornflour. Then keep dipping them in the batter and take them out and fry all the bitter gourds until they become crunchy.
- This bitter gourd fry does not taste bitter at all and you can enjoy it as a snack.

When you cut bitter gourd and keep it in water mixed with lemon and salt, its bitterness goes away. Along with this, if the bitter gourd is dried a little, its bitterness also reduces. If you are making vegetables then you should add onion in good quantity to bitter gourd. This balances the bitterness. Dry mango powder is also helpful in reducing the bitterness of bitter gourd.
