If you always throw watermelon peels in the dustbin, then think twice before doing so next time. Actually, watermelon peels also contain nutrients and you can make vegetable and eat them. This spicy vegetable tastes very tasty with paratha, puri, roti, rice. The taste is such that hardly anyone would be able to recognize that you have prepared a vegetable made from watermelon peel. So let’s see its step by step recipe.
To make watermelon peel curry, first peel the watermelon and take it out. Remove the green part behind it and after washing the remaining part thoroughly, chop it finely. Keep in mind that the peels have to be cut into small pieces only, because they take some time to cook. Now know the recipe.

Mustard oil 3-4 tbsp, a pinch of asafoetida, dry red chilli 3, mustard seeds 1 tsp, fennel seeds 2 tsp, cumin 1.5 tsp, nigella seeds ½ tsp, ginger (chopped) 2 tsp, garlic (chopped) 2 tsp, onion (chopped) 1 cup, green chilli (chopped), salt to taste, turmeric powder ½ tsp, red chilli powder 1.5 tsp coriander powder 1 tbsp watermelon rind (peeled and chopped), about 3 cups, 1½ tsp coriander powder, 1 tbsp coriander powder, about 3 cups peeled and chopped watermelon rind, watermelon juice ¼ cup, 1 tsp dry mango powder, 1 tsp kasoori fenugreek leaves.
Watermelon Peel Vegetable Recipe
- First of all, heat mustard oil in a pan and add mustard, fennel, cumin and nigella seeds and fry them.
- Once the spices are roasted, add dry red chilli, chopped garlic, ginger and green chilli. While stirring, fry it for 1-2 minutes.
- Now you have to add chopped onions to these spices and fry them until they turn golden.
- When the onion is roasted, then add chopped watermelon peels to it. Mix everything well.

- Now add turmeric powder, red chilli powder, coriander powder and salt to it. Cover it after running it.
- You have to cook the watermelon peels for 2-3 minutes on medium flame.
- Now make juice by blending one cup of chopped and seeded watermelon. Add it to the vegetables and mix.
- Now you have to cover the vegetable again and cook it on low flame for 18-20 minutes. Keep stirring the vegetables in between.
- When the watermelon melts well, add dry mango powder and crushed Kasuri methi to it and mix well.
You can serve this vegetable with hot paratha or ghee coated roti, which has a balance of mild sweetness as well as tangy taste and spices. When you serve this vegetable to your family members, they will not even know that it has been made from watermelon peel.
