peas and cottage cheese
Material- 250 grams paneer, 1 cup peas, 3 tomatoes, 10-12 cashew nuts, 1 inch ginger, 2 green chillies, ½ teaspoon cumin, ½ teaspoon turmeric, 1 teaspoon coriander powder, ½ teaspoon red chilli powder, ½ teaspoon garam masala, 2 tablespoons ghee, salt and coriander.
Method
Grind tomatoes, cashew nuts, ginger and green chillies and make a smooth paste. Heat ghee in a pan, crackle cumin seeds, add prepared paste and fry well. Now mix all the spices and add some water and cook the gravy. After this, add peas and cheese and cook on low flame for 8-10 minutes. Add green coriander on top and serve hot.
Satvik Gravy of Shahi Potato
Material- 4 boiled potatoes, 2 tomatoes, 12 cashews, 2 tbsp curd, ½ tsp cumin, ½ tsp turmeric, 1 tsp coriander powder, ½ tsp Kashmiri red chilli, ½ tsp garam masala, 2 tbsp ghee, salt and coriander.

Method
Prepare tomato and cashew paste. Crack cumin in ghee, add this paste and fry well with spices. Now add whipped curd and keep stirring continuously so that the curd does not curdle. Add water as required and let the gravy boil. Finally add chopped boiled potatoes and cook for 8 minutes. Serve prepared shahi aloo sabzi with puri, paratha or jeera rice.
Creamy Bottle Gourd Kofta Curry
Material- 2 cups grated bottle gourd, 2 tbsp gram flour, 2 tomatoes, 10 cashew nuts, 2 tbsp fresh cream, ½ tsp cumin, ½ tsp turmeric, 1 tsp coriander powder, ½ tsp garam masala, ghee, salt and oil.

Method
Mix gram flour and salt in grated bottle gourd and make small koftas and fry them till golden. Make a paste of tomato and cashew nuts and fry it with cumin seeds in ghee. Add spices and cook well and then prepare thick gravy by adding water. Finally add fresh cream and add the koftas just before turning off the gas. This will keep the koftas soft and the taste of the gravy will also double.
