Jharkhand Famous Dish: As the rainy season approaches, wild mushrooms found in the forests of Jharkhand start appearing in the Rugra and Khukri markets. Local people often call them Sawan mutton because their taste and appearance are similar to mutton. These wild mushrooms are rich in protein, fiber and many essential nutrients. However, it is very important to clean them thoroughly before cooking. If you are making rugra and khukdi for the first time, here is an easy way to clean them and cook them in a spicy style.
How to clean rugra and khukri?
Since rugra and khukri grow in forest soil, they often have soil and small particles stuck to them. First, soak them in clean water for 15-20 minutes. Then, wash them thoroughly by rubbing gently with hands, changing the water 2-3 times if necessary. Cut large pieces of rugra from the middle so that they can be cleaned from inside also. Finally, blanch (blanch) them in boiling water for 3-5 minutes and drain the water. This removes any remaining dirt and makes the cooking process easier.

Ingredients for making Rugra-Khukri
- 500 grams rugra or khukdi (cleaned)
- 2 medium sized onions (finely chopped)
- 2 tomatoes (chopped)
- 1 tbsp ginger-garlic paste
- 2 green chillies (finely chopped)
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp garam masala
- 2–3 tbsp mustard oil
- salt as per taste
- Fresh coriander for serving
Recipe (Step-by-Step)
First of all, heat mustard oil in a pan, when the oil starts smoking, reduce the flame. Add onion to it and fry until it turns golden brown. Next, add ginger-garlic paste and green chilli and cook for 2 minutes. Now add tomatoes and spices-turmeric, red chilli powder, coriander powder and salt and fry until the spices start leaving oil. After this, add cleaned rugra and khukri and fry with spices for 5-7 minutes while stirring continuously. Then, add some hot water as per requirement, cover the pan and let it cook on low flame for 10-15 minutes. When the rugara becomes completely soft and the flavor of the spices gets mixed well, sprinkle garam masala and fresh coriander on top and turn off the flame.

Serve hot and spicy rugra-khukri dish with rice, roti, paratha or bajra roti. Using mustard oil and traditional spices further enhances its taste.
