Ingredients to make Raw Mango Papad
– Raw mango- 1 kg (peeled and chopped)
– Sugar- 250 to 300 grams (depending on the sourness of mango)
– Salt- 1 tsp
– Black salt- 1 tablespoon
– Roasted cumin powder- 1 tsp
– Red chilli powder- 1 tsp (as per taste)
– Ghee or oil- 1-2 spoons (for greasing the plate)
How to make raw mango papad
To make raw mango papad, first peel the mangoes and cut them into small pieces. Then boil these pieces in a pot or cooker with 1 cup of water until they become soft. After boiling, when these pieces become soft, mash them and filter them through a sieve to get a smooth pulp. Put the strained pulp in a pan. Add sugar, salt, black salt, roasted cumin powder and red chili powder in it and mix it all well. Cook it on low flame on gas until it becomes thick. Cook it for about 7 to 10 minutes. When the mixture becomes thick, grease a big thali or plate thoroughly with ghee or oil and spread this hot mixture in a thin layer on the plate. Let it dry in the sun or under a fan for about 2 to 3 days. After it dries thoroughly, cut it into pieces with a knife in the shape of your choice. Hard raw mango papad can be stored in an airtight container at room temperature for 3 months and in the refrigerator for 6 months to 1 year.
