These two things are very important for you to stay healthy. To make cheese, milk has to be curdled first. Some people use white vinegar, some lemon juice and some alum for this. Both the taste and texture of the paneer should be correct. For this, it is important that you keep in mind the quantity of these things.
Rarely do you find such cheese in the market which is exactly as per your taste and texture. Many times either it becomes rubbery or its taste is not good. In fact, apart from flour and starch, poor quality adulterated milk etc. has also started being used in cheese. If you are using lemon juice to make paneer, then take lemon juice according to the quantity of milk. For example, suppose you have taken 1 liter of milk, then use 2 to 3 tablespoons of lemon juice to curdle it.

You can also use alum instead of lemon and vinegar to curdle milk to make cheese. If you are making cheese from alum, then you will need a small piece of alum to curdle 1 liter of milk. This piece is just a little bigger than a pea or about the same size.

Similarly, if you have to prepare paneer from 1 liter of milk, then 2 tablespoons of vinegar is sufficient. Using too much vinegar can spoil the taste of paneer, hence there is a special need to keep an eye on its quantity.

Apart from keeping in mind the quantity of all the three things, also keep in mind that these ingredients should not be added directly to curdle the milk. First take some water in the bowl.
