Onion vegetables made in 10 minutes

All three vegetables are ready in just 10 minutes. It would be a best idea to try these vegetables in lunch.
Chef Pankaj Bhadauria has shared three recipes made from onion. The first is curd-onion curry which will give a cooling effect. The second one is Malai Onion Curry…its creamy texture looks amazing. The third one is gram flour-onion dry curry. You will like its aromatic taste very much.

Cut 4-5 onions into thin lengths. Similarly, take some green chillies as per taste and chop them finely. Along with this, also cut ginger into small pieces. Now heat the pan and add some oil in it. Add cumin seeds in hot oil. As soon as cumin seeds sizzle, add chopped ginger and green chillies to it. When it crackles, add chopped onions also. Add some salt to it. Let the onion fry until it turns golden. Till then beat the curd well. Add spices like red chilli, coriander powder to onion. Now turn off the gas and add curd to it. Stir it continuously until it is mixed properly. Now turn on the gas and cook while stirring on low flame. Add finely chopped coriander leaves. Curd-onion curry is ready.

Creamy Onion Curry
Chef Pankaj Bhadauria has mentioned the second vegetable as Malai Onion. To make this, take small onions. Cut it from both sides and peel it, but keep it whole. Just have to make cross cuts in it. Heat oil in a pan. Add onion to it and fry for 3-4 minutes on high flame till it becomes light golden. Now add green chilli and finely chopped ginger. Add salt to it also, so that the onion will cook quickly. Add turmeric, Kashmiri chilli powder and fry the spices for 10 seconds. Now add half cup of water in it. Cook it on high flame for 2-3 minutes and then add 1 cup cream to it. Now cook for 1 to 1.5 minutes. Creamy onion and cream curry is ready. Do not add any sour thing like tomato, lemon in it, otherwise there is a risk of the cream curdling. Lastly, after turning off the gas, you can add dry mango powder to it. Garnish with coriander leaves.
Onion-gram flour dry vegetable
Cut 4 medium sized onions into small pieces and roughly chop them. Now heat 3 spoons of oil in the pan and add half spoon of cumin, same amount of fennel and 1 spoon of crushed dry coriander. Add finely chopped ginger and green chillies to it. Along with this add onion also. Now take out 1 cup gram flour in a bowl. Add some salt, Kashmiri red chilli powder and a little oil to it. Now a splash of water has to be added to this gram flour. Mix it again with hands. With this its texture will become like bread crumb. Now add it to roasted onions. Fry it while stirring continuously for 3-4 minutes. When the gram flour gets cooked and it starts giving out a pleasant aroma, add a little more salt, red chili powder, a little dry mango powder and Kasoori methi to it. Mix everything well. Add coriander leaves and garam masala. This vegetable tastes amazing with paratha, puri and roti.
