Even if you do not have curd or soda, you can make puffy bhature. For this you just have to add some boiled and mashed potatoes to the flour. Yes, potato helps in softening the dough and making Bhature soft from inside. Apart from this, you also have to use a little sugar and refined oil in the flour. Use lukewarm water to knead the dough. After this you have to mix all the things well and prepare a soft dough. Keep in mind that after kneading the dough, apply a cotton cloth over it and leave the dough like this for about 20 to 30 minutes. Due to this, Bhature becomes very puffy and soft.

Now if you are making Bhature then chickpeas must be there. For this you have to take chickpeas, which have to be soaked overnight. In the morning, put chickpeas in a pressure cooker and add tea leaves or tea bag to it and boil it. Now heat oil in a pan and add onion, tomato, ginger-garlic paste and fry well. After this add coriander powder, red chilli powder, turmeric powder and chickpea masala. Fry this also well. Now add salt on top. After frying the spices, add boiled chickpeas to it. Mash them lightly also. Add water as per requirement and boil.

- Do not knead the dough too tight or too loose.
- Do not leave time for the dough to rest.
- Do not use too much flour or dry dough for rolling.
- Do not keep the oil temperature wrong
- Drop the Bhature gently into the oil and do not press immediately.
- Do not leave the spices undercooked in chickpeas.
- Do not cook chickpeas without soaking or parboiling them.
