Banarasi vegetable
- First of all, heat mustard oil and add panch phoron masala (fennel, fenugreek seeds, cumin, mustard, nigella seeds) to it.
- Add asafoetida, whole coriander, finely chopped ginger, dry red chilli and green chilli.
- Now add 250 grams chopped pumpkin in it and mix well with a ladle.
- Add red chilli powder, Kashmiri red chilli powder, turmeric, coriander powder and a little water and cook covered.
- When the pumpkin becomes a little soft, add 3 boiled potatoes (broken into pieces), ½ cup boiled black gram to it.
- Now add salt and water last. Cover it and cook till it thickens slightly.
- When the vegetable gravy starts thickening, add mango powder, garam masala, kasoori methi and green coriander and mix.
- In this way the vegetable that comes with your Banarasi Kachori will be ready.

You need 1 cup wheat flour, 1 cup all-purpose flour, salt, celery and 1 tablespoon oil. Mix everything well with hands. After this, add water as required and knead a soft dough.
To prepare Kachori
Coarsely grind ½ cup soaked urad dal, a small piece of ginger and 2 green chillies. Now heat oil and add cumin, fennel and asafoetida. Add ground lentils and cook it for 5-6 minutes. Add salt and Kasuri methi to it as per taste.
Final step of making kachori
Let the stuffing cool down. After this, take out small balls from the dough, fill them with kachoris and roll them into small balls. Fry all the kachoris on medium flame until they turn golden. Your tasty Kachori vegetable is ready.
