How is Gulab Baati of Rajasthan?

Gulab Baati is a special sweet, which is considered a sweet and tasty version of the traditional Rajasthani Baati. In this, ghee coated bati is prepared with light sweet syrup and the fragrance of rose, which makes its taste even more delicious. Due to its desi style and rich flavour, this dish is made on special occasions and is now making its mark at the international level as well.

Gulab Baati Recipe

Material

Wheat flour – 2 cups Semolina – ½ cup Ghee – ½ cup Baking soda – A pinch Milk – Ghee as required (for frying)

For syrup:

Sugar – 2 cups Water – 1½ cups Rose water – 1-2 tsp Cardamom powder – ½ tsp Saffron – few threads (optional)

How to make Gulab Baati

Mix wheat flour, semolina, ghee and baking soda in a vessel and mix well. Now add milk little by little and knead a stiff dough. Now keep it covered for 10 to 15 minutes. After this make small round balls of dough. If you wish, you can give a design by applying slight pressure in the middle. If you want traditional taste then fry it in ghee on low flame till it turns golden brown. But if you want to make it healthy then you can also bake or air fry it. Now add sugar and water in a pan and boil. When 1 string syrup is prepared, add rose water, cardamom powder and saffron in it. Dip the hot batis in the syrup for 10 to 15 minutes, so that they absorb the sweet properly. Serve Gulab Baati lukewarm. Garnish by adding chopped pistachios or almonds on top.
