If the curd has become sour then add a little milk to it and keep it in the refrigerator for some time. This helps in balancing its sourness. Apart from this, when you have set curd, the water on top of it should be removed immediately. If the curd has become sour then put it in a muslin cloth and leave it to be squeezed and then after taking it out you can use it in anything, it becomes very creamy and the sourness also goes away.
