Ingredients for making puree
You need Bottle gourd (Ghiya/Dudhi) cut into small pieces 1½ cups, Coriander ¼ cup (chopped), Garlic cloves 10, Onion 10, Ginger 1 inch piece (chopped), Green chilli 2, Lemongrass stalks 2, Lemon peel 1 (green lemon), Whole black pepper (1 tsp), Whole dried coriander (1½ tsp), Cumin 1 tsp, Basil leaves 30, Soy sauce (1 tbsp), water (¼ cup), oil (1 tbsp).
These vegetables will be needed
Carrots ¼ cup (chopped), Zucchini ¼ cup (chopped), Baby Corn ¼, Broccoli ¼ cup (chopped)

Coconut milk (one cup), salt as per taste, basil leaves (a handful).
Bottle Gourd Thai Curry Recipe
- Put all the things mentioned for making puree, including bottle gourd, in a mixer jar and grind it to make a smooth paste.
- The second step is to heat a pan. Add prepared paste into it and fry on medium flame for 5-7 minutes.
- Cook this paste until its raw smell disappears and it starts separating slightly from the pan.
- You have to add chopped vegetables like zucchini, carrots, baby corn. Fry all the vegetables for 4-5 minutes until they are lightly cooked.
- Now add coconut milk to it and also add salt as per taste. Cover this curry and cook it on low flame for 5-7 minutes.
- Before turning off the gas, add fresh basil leaves in it. Now cover it and turn off the gas.
- Serve this Thai curry with hot rice. Its creamy texture melts in the mouth.
Keep these tips also in mind
Other vegetables have also been added to this bottle gourd Thai curry, so you will definitely get nutrients from it, but if you want to add protein to it then you can also add paneer or tofu. Apart from this, keep the quantity of spices like salt, green chilli, black pepper as per your taste.
