Satuan or Satuani is a festival which is not only a part of traditions, but it is also related to our health and nature. Actually this festival is considered the beginning of summer. With the beginning of summer, Satuan is also a festival to celebrate the new crop of gram and barley. On this day, everyone in the family takes bath in the morning. After this, things made from Sattu and some traditional dishes are made. Which is also donated along with eating. Especially on this day, things made from Sattu are consumed which keeps the body cool in summer and also gives strength.
Every year Satuan is celebrated on 14th April. According to the calendar, this day is of Aries Sankranti. This festival related to agriculture and change in weather also shows the excellent understanding of our elders that with the change in weather, there should be changes in the diet too. Sattu Chokha..Simple and Healthy
Chokha made from gram sattu is especially consumed on the Satuan festival. This is a very simple recipe. Finely chopped onion, chopped green chillies, salt, lemon juice and a little mustard oil are mixed in Sattu. Then add a little water to it and knead it well. Your spicy Sattu Chokha is ready. Apart from being tasty, it is rich in protein and also keeps the body cool.
mango tikora
Mango tikora is also made at Satuan. Tikora means small raw mangoes. In this, small mangoes or Amiya are washed and peeled and then cut and mixed with green chillies, green coriander, salt, a little jaggery etc. to make a chutney. Spicy mango tikora is ready which is delicious and helpful in protecting from heat stroke.

On the festival of Satu, Sattu sherbet is also prepared in homes, which is made in two ways, one sweet and the other spicy and tangy sattu sherbet. After dissolving Sattu in water, finely chopped onion, green chilli, black salt, lemon, roasted cumin powder and green coriander are added to it. Whereas people use jaggery or sugar in the sweet syrup of Sattu and lemon is added along with it.
Jirvani means buttermilk
Jirwani i.e. buttermilk is also included among the things eaten on Satuan festival. It is considered very good for digestion. Some people drink it directly while some prepare natural drink by mixing it with Sattu. This is beneficial in both ways.
Sattu laddu and barfi
On the day of Satuan, Sattu laddus or barfi are also made. In which after roasting the Sattu, desi ghee, green cardamom and dry fruits are added to it. These laddus are prepared with raw khad or jaggery which acts as an energy bar in summer.

On the Satuan festival, the most popular traditional dish here is Litti-Chokha. Apart from this, things like mango panna, chopped onions, green chillies, cucumber salad, sattu muthia, sattu parathas are also made.
