Chef Ranveer Brar has shared the recipe of Chilli Chicken and along with it he has also told why it is called Bang-Bang Chicken. If you are a chicken lover then you should definitely try this recipe given by him. Chilli chicken is crispy from outside and soft-juicy from inside. Chef Ranveer Brar says that if you want the chicken to be a little more crisp, you can coat it with corn starch. He has also explained how to prepare the sauce to be served with chilli chicken.

The flavors of Crispy Chilli Chicken are bold and along with it the chef has also shared the recipes of two amazing sauces. Chilli Chicken is a perfect balance of spice and flavour. So let’s see the complete step by step recipe.

For chicken marination

500 grams chicken thighs, 1 tablespoon ginger-garlic paste, 1 teaspoon oil, 1 tablespoon American sauce, 1 tablespoon red chili powder, half teaspoon black pepper (crushed), 2-3 garlic cloves (grated), salt as per taste.

For American Style Sauce

2-3 tbsp mayonnaise, 2 tbsp hot sauce, 1 tbsp sweet chilli sauce, 1 tbsp tomato ketchup.

For Schezwan Style Sauce

2 tbsp white sesame seeds, 1-2 tsp chilli oil, 1/3 cup roasted peanuts, 1-2 tsp dark soya sauce, some water, 1 green chilli (coarsely chopped), 1-2 tbsp green onion (coarsely chopped), 2 tbsp fresh coriander (finely chopped), 2 tbsp green onion (chopped), 1-2 green chillies (chopped), ½ inch Ginger (peeled and finely chopped), 1-2 tsp malt vinegar, 1-2 tsp dark soy sauce, 1-2 tbsp chili oil, 2 tbsp remaining extra oil, 1 tbsp prepared paste, 1-2 tbsp water, 1 tsp white sesame seeds.

Chicken Marination

Make small cuts in the chicken. Now add chicken, ginger-garlic paste, oil, degi red chilli powder, crushed black pepper, garlic and salt as per taste in a bowl and marinate it well.

American Style Sauce

Mix mayonnaise, hot sauce, sweet chili sauce and tomato ketchup in a bowl and mix well. Add a little of this sauce to the marinated chicken and mix it.

For Schezwan Style Sauce

  • Add white sesame seeds, chili oil, roasted peanuts, dark soy sauce and some water in a bowl. Keep it ready.
  • Now add green chilli, green onion, ginger, malt vinegar, dark soy sauce, chilli oil and remaining oil and mix everything well.
  • Put the mixture of all these things in a mixer grinder jar and make a smooth paste.
  • Add the prepared paste, water and white sesame seeds in a bowl, mix well and keep aside.

How to cook chicken

Heat oil in a pan. Add marinated chicken to it and cook it for 4-5 minutes on both sides. Till it is completely cooked. It will be soft from inside and slightly crisp from outside.

Serve chicken like this

Now take out the chicken in a serving plate. Serve it garnished with chopped cucumber, white sesame seeds, chili oil and coriander leaves. Serve prepared American and Schezwan sauce with it. Enjoy hot chicken chilli.
