To make this plant-based curd, you need 1 cup cashews, one medium sized lemon, or 1-2 teaspoons apple cider vinegar, 1 teaspoon maple syrup, 1 pinch of salt. Apart from this, you need probiotic capsules or yogurt starter culture… these help in setting the curd.

  • Wash the cashews once with water and then soak them in filtered water, so that they swell well.
  • If you want, you can soak cashews for 2-3 hours or overnight.
  • Take out the cashews from the water, separate them and then wash them once with cold water.
  • Put the cashews in the mixer and blend them until they become completely smooth.
  • Now add maple syrup or honey in it. Apart from this, add lemon juice, salt and blend once again.
  • If it seems too thick or dry, you can add a little water to it to get the right consistency.

  • Now you have to open the probiotic capsule and mix it or add yogurt starter culture and blend once again.
  • Put this prepared mixture in a clean jar and cover it with a paper towel or any cloth and seal it with a rubber band.
  • Keep this jar in a warm place, but it should not come in contact with air. You can keep it in the kitchen only.
  • Keep it for a few hours, at least 8 to 10 hours. Keep in mind that the longer you ferment it, the more sour the curd will become.
  • Check it after 8 hours. If the curd has set well, then remove it from the warm place and keep it in the refrigerator.
  • Your cashew curd is now ready to eat, which you can eat directly or serve with fresh fruits, dry fruits and honey along with your favorite toppings.
