Mother’s Day Special: Mother is such a personality in front of whom everything pales in comparison. Because mother is not just a relation, but she is the strength and biggest support of the entire family. She keeps working for us day and night. Be it washing clothes, getting homework done, or cooking. The taste of food prepared by mother is different. No chef can compete with this. But many times, due to studies or career, children have to stay away from their home, after which the thing they remember the most is eating at the hands of their mother. There are many dishes which remind us of our mother just by looking at them.
Be it khichdi made by mother when she is ill, sweet halwa made during festivals or hot parathas when returning from a trip, every dish brings with it love and affection. This is the reason why Indian food is not identified only by the spices, but by the love and affection that goes into it. On the special occasion of Mother’s Day, let us know about some such dishes in which mother’s love is hidden and the recipes to make them at home.

How to make mother’s hand potato parathas
Eating mother’s handmade potato parathas for breakfast in the morning has its own unique pleasure. But children living away from home miss their taste very much. But the good thing is that you can also make mother’s potato parathas yourself. For this, first mash the boiled potatoes well. Prepare the stuffing by adding finely chopped green chillies, coriander, salt, red chilli, garam masala and some dry mango powder. Now add some salt to wheat flour and knead a soft dough. Roll out a small ball, fill it with potato stuffing and roll the paratha gently. Apply ghee or oil on a hot pan and cook until golden and crisp from both sides. Eat hot with curd, butter or pickle.

Mother often makes halwa to celebrate every festival or happiness. If you are missing that halwa then you can also make it yourself. For this, first of all heat ghee in a pan and add semolina or wheat flour and fry on low flame till it turns golden. When the aroma starts coming, slowly add water or milk in it and keep stirring continuously so that lumps do not form. After this add sugar and mix well. Add cardamom powder and dry fruits on top. After cooking for a few minutes, the halwa will be ready. Serve it hot.
Mother’s stuffed brinjal
Wash the small brinjals and make a slit in the middle but do not separate them completely. Now prepare the masala by mixing roasted gram flour, coriander powder, fennel, turmeric, red chilli, salt and a little oil in a bowl. Stuff this masala inside the brinjals. Heat oil in a pan and cook the brinjals covered on low flame. Keep turning occasionally so that the masala gets cooked properly. When the brinjal becomes soft and the spices are roasted well, the prepared stuffed brinjal tastes delicious to eat with roti or paratha.

No one can give the taste of Kadhi Pakoda like mother. To make this, beat curd and gram flour well, then prepare a thin solution by adding water to it. Now heat oil in a pan and add fenugreek seeds, cumin seeds and curry leaves. Add curd-gram flour solution in it and let it cook on low flame. To make pakodas, prepare a batter by mixing salt, onion and spices in gram flour and fry small pakodas. Put the prepared pakodas in the curry and boil for some time. Apply tempering of red chilli and ghee on top and serve with rice.

When mother used to make Dum Aloo, everyone used to lick her fingers. You can also try this. For this, boil small potatoes and fry them lightly. Now put oil in the pan and fry onion, ginger-garlic paste and tomato. Prepare the masala by adding turmeric, red chilli, coriander powder and garam masala. Then add fried potatoes and mix well with the spices. Add some water and let it cook on low flame so that the taste of spices gets absorbed properly in the potatoes. Add green coriander on top and eat with puri or paratha.
