Actress Shweta Tiwari loves Khichdi. She once told that she can eat Khichdi made by her mother 365 days of the year. Shweta Tiwari likes to eat liquid khichdi prepared with vegetables and with desi ghee. This type of khichdi is not only rich in nutrients, but is also very light to digest. Desi ghee is a soluble fat and pickle is probiotic, hence consuming it in limited quantity is beneficial for gut health.

Eating this type of mixed veg liquid khichdi helps in improving digestion. It is also helpful in weight control, because Khichdi is mostly prepared with very less oil and less spices. Its specialty is that this one pot meal prepared in a simple way is full of nutrition.

To make Khichdi, take half a cup of rice, equal quantity of washed moong dal, desi ghee or a little mustard oil, 1 potato, 1 carrot, 2-3 tablespoons of cauliflower florets, 5-6 beans (finely chopped), 1 medium sized tomato and some green peas. For tadka, half teaspoon cumin, 1/4 teaspoon turmeric, 1 pinch asafoetida, 1 green chilli, coriander leaves, half inch ginger (grate or make paste).
Khichdi Recipe
- First of all, wash the rice and lentils and soak them for 30 minutes.
- Now heat desi ghee or oil in a pan or pressure cooker.
- Add cumin and asafoetida in oil. Add ginger, turmeric and salt as per taste and fry.
- Once the spices are roasted, add finely chopped tomatoes and cook until they melt.
- Once the tomatoes are cooked, add all the chopped vegetables and fry for some time.
- Now put the soaked rice and lentils in the cooker.
- Add at least 3 times water to the rice and dal and close the lid.
- Your liquid khichdi will be ready in 2-3 whistles. If the texture seems thick, add a little water and cook for a few minutes.
