It is prepared by adding many types of chemicals. In the scriptures, plain salt has been kept in the category of ‘cultured’ food. This means that consumption of this salt can reduce the sanctity of the fast.
Rock salt is just an option during Ekadashi fast.
On the other hand, rock salt is considered completely natural. It is obtained directly from the mountains, hence it is considered pure. It is said in the scriptures that if the fasting person is ill or consumption of salt is necessary, then rock salt can be consumed as an alternative. The biggest rule on Ekadashi is to give up ‘anna’ (rice, wheat, pulses). It is said in ‘Padma Purana’ that sin resides in food on this day. Therefore, it is more important to avoid food than salt.
