Ingredients for Millet Khichdi

For Millet and Dal:

Foxtail Millet (Kangni) ¼ cup

Pearl Millet (Bajra) ¼ cup

jowar ¼ cup

Sanwa (Barnyard Millet) ¼ cup

Washed Moong Dal ¼ cup

masoor dal ¼ cup

Pigeon pea (Toor) dal ½ cup

Turmeric ½ tsp

salt 1 tsp

water 7 cups

For tempering:

Ghee 3 tbsp

dried red chilli 2

Asafoetida ½ tsp

Mustard 2 tsp

cumin 2 tsp

curry leaves 1 sprig

Onion (finely chopped) ½ cup

Ginger (finely chopped) 2 tsp

Garlic (finely chopped) 1 tbsp

Green chilli (finely chopped) 1

Turmeric ½ tsp

Red chilli powder as per taste

salt as per taste

Tomato (chopped) 1 cup

water as per need

Kasoori Fenugreek Powder

How to make Khichdi

First of all, take out all four grains i.e. foxtail millet, pearl millet, jowar and barnyard millet in a vessel and wash them thoroughly and filter them. Now put the pressure cooker on the gas. Put all the grains in it along with water. After this, mix washed moong dal, mashoor dal, toor dal also in it. After this add turmeric and salt and close the cooker.

Now take a pan and add ghee in it and heat it. After this add dry red chilli, asafoetida, mustard seeds, cumin and curry leaves. Now add finely chopped onion, ginger-garlic and fry lightly. When the color of onion changes, mix green chilli, turmeric powder, red chilli powder, finely chopped tomatoes in it and fry well.

After 2 to 3 whistles, remove the cooker from the gas. After the whistle, add the prepared masala to the dal and cook while stirring well. Now add Kasuri methi, fenugreek powder, finely chopped coriander and lemon juice and mix. Serve it hot.
