Cashews are used extensively in Kaju Katli. This is the reason why its flavor is also quite rich. The price of cashew nuts is very high in the market, due to which the price of this sweet always remains high. It is so delicious in taste that everyone likes to eat it. Cashew is also rich in nutrients. Protein, healthy fat, fiber, vitamins, iron, zinc and many types of minerals are found. Apart from strengthening the bones, it is also helpful in providing energy, improving digestion and maintaining heart health.

200 grams cashew nuts 100 grams sugar 2 spoons ghee silver work
How to make Kaju Katli
step 1 – First of all, you have to put cashews in a mixer jar and grind them finely. But keep in mind that grind the cashew nuts while stirring the mixer for some time. This will release the cashew oil and grind the batter very finely.
Step 2- Now take a pan and put it on the gas. Add 1/4 cup water in it and mix sugar. While stirring, let the sugar dissolve and make syrup. When the sugar dissolves well, cook it for 2-3 more minutes.
Step 3- When the sugar gets cooked well, add ground cashew powder to it. Keep stirring this mixture continuously otherwise the batter may stick. When the cashews and sugar mix well and the batter comes to the consistency then turn off the gas. Take out the mixture in a plate and keep it to cool.
Step 4- The mixture should not be cooled too much. After this, apply ghee on your palm and plate. Mash the mixture with your hands to make it smooth. Place the mixture on butter paper and roll it like roti with the help of a rolling pin. Spread this roti on a plate and cut it into the shape of barfi. Decorate it with silver work and serve.
