To make Paya Soup, you will need 500 grams Paya, 3 onions, 2 teaspoons ginger-garlic paste, 2 teaspoons red chili powder or as per taste, 1 teaspoon turmeric powder, salt as per taste or 2 teaspoons, 2 teaspoons coriander powder, 1 teaspoon garam masala, paste of 8 to 10 green chillies, and at least a handful of fresh coriander. Paya Soup Recipe

  • First of all, wash the paya thoroughly, add water and put it in a pressure cooker. Then, tie all the whole spices in a small cotton cloth and put it in the cooker. Now boil it for some time.
  • When the pressure cooker whistles one or two times, open it and clean all the dirt or hair from the paya thoroughly with a knife. At this stage, the legs become slightly soft, making them easier to clean and chop.
  • After cleaning the legs, cut them into pieces of your choice, cover and keep aside.
  • Now, chop the onion finely. Fry them till they become golden brown and then grind them in a mixer to make a paste.
  • Heat oil in a large pan and add bay leaves once the raw smell disappears. Then, add onion and ginger-garlic paste and fry for a while.
  • When onion, garlic and ginger are roasted, add dry spices like turmeric, chilli powder, salt and coriander powder and fry for a few more minutes while stirring continuously.
  • When the masala is ready, add the paya. Also, add water as per requirement. Add chopped green chillies and cook well until it becomes soft.
  • When the payas are cooked, add fresh coriander and garam masala. Your hot and delicious paya soup is ready. You can drink it straight or enjoy it with naan.
