Ingredients of Veg Egg Curry

To make Veg Egg Curry, you will need 250 grams of cheese, 1 tablespoon arrowroot, 1/4 teaspoon turmeric, 2 teaspoons flour, 1 teaspoon oil, 1 teaspoon salt, 2 boiled potatoes. These are your ingredients for making eggs.

Ingredients for Gravy

Two medium sized onions, 2 green chillies, 2 tomatoes, half teaspoon cumin, half teaspoon turmeric, 2 teaspoon dried coriander, half teaspoon black pepper powder, half teaspoon garam masala, 2 teaspoon gram flour, 1 teaspoon Kasuri methi, 1 teaspoon fennel, half teaspoon red chili powder, salt as per taste.

Prepare eggs like this

  • First of all, grate the cheese and take out one-fourth of it in a separate bowl.
  • Mix turmeric and salt in the cheese you have taken out in a separate bowl, because this will prepare the egg yolk part.
  • Now we will mix arrowroot, salt, boiled and mashed potatoes in the cheese that was saved. Mash it and make it completely smooth.
  • Make small balls of the cheese in which turmeric has been mixed, just like the yolk comes out of a boiled egg, you have to keep it approximately the same size.
  • Apply the refined mixture of cheese, potato and arrowroot in small amounts on your hands and make a ball like shortbread. Fill the prepared balls in it and after closing it, give it the shape of an egg.
  • Dip these prepared eggs in dry flour and coat them and then leave it for some time. Meanwhile, heat oil in the pan to fry the eggs.
  • After the oil becomes hot, keep the flame on low medium and fry the eggs carefully till they turn golden, because if the ladle is not stirred properly then the eggs will burst.

  • Make a paste by grinding onion and also grind ginger and garlic cloves. After this, grind tomatoes and make puree.
  • Keep only that much oil in the pan as required for the gravy. Add onion, ginger, garlic paste to it and fry for some time.
  • When the masala is roasted for some time, add green chillies cut from the middle and also add tomato puree and all the spices including turmeric, chilli, salt, coriander powder, black pepper powder.
  • When the masala starts releasing oil, add Kasuri methi, fennel powder and a little butter (butter is optional), but this enhances the taste of the vegetable gravy.
  • Add water as per requirement in the prepared masala and let it boil for two times. After this add the prepared eggs and cook the vegetable until the gravy thickens.
  • Garnish the prepared curry with green coriander and add garam masala. In this way you can prepare vegetarian egg curry.
