Watermelon feta bruschetta recipe

Ingredients
  • 4 pcs garlic bread (crispy)
  • Feta cheese (crumbled)
  • 1–2 tbsp mayonnaise
  • 2 tbsp curd (hung/thick)
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper to taste
  • Fresh parsley (finely chopped)
  • Watermelon (small cubes, seeds removed)
Steps to make: 
  1. Mix mayonnaise, curd, lemon juice and olive oil.
  2. Add a pinch of salt & pepper. Keep it smooth and slightly tangy.
  3. Cut into small cubes. Lightly season with a pinch of salt and a squeeze of lemon (don’t overdo—keep it fresh).
  4. Ensure garlic bread is extra crisp (re-toast for 2–3 mins if needed).
  5. Spread a layer of the creamy mix on each bread
  6. Add watermelon cubes
  7. Sprinkle generous feta on top
  8. Drizzle a tiny bit of olive oil, crack fresh pepper, and garnish with parsley.
