How to make Tandoori Biryani

  • Marinate the chicken pieces in curd, tandoori masala, red chilli, turmeric, ginger-garlic paste, lemon juice and salt for 12 hours. On the other hand, wash the Basmati rice and soak it for 30 minutes.
  • Now cook the chicken tandoori style. For this, add some oil in the pan or oven and bake the marinated chicken for 5-7 minutes to give it a slight tandoori flavour. If you have an oven, then bake it at 180°C for 15-20 minutes.
  • Now boil the rice. For this, pour 4 cups of water in a vessel and add rice along with bay leaves, cloves, cardamom and salt. Cook it till 80 percent. After this, grind the rice with the help of a strainer or a cloth.
  • Now take a heavy bottom pan. First add half the rice, place marinated chicken on top, then add the remaining rice. Add ghee, fried onion, green coriander, mint and saffron milk on top. Cover and cook on low flame for 15-20 minutes.
  • After this, place a bowl in the biryani. Put a burnt piece of coal in it and pour ghee on top and close the lid. Coal smoke is best for bringing smoky flavor to biryani. Your Tandoori Biryani is ready.
