Rasam is a recipe of South India which is connected to the core emotions of the people. It is especially liked in Karnataka, Tamil and Telugu. This is such a comfort food, it is full of sourness as well as the aroma and goodness of spices. It is also very easy to digest. In winter, if you have rasam with hot rice in the afternoon, it makes the day. Rasam is made from things like tamarind, tomato, black pepper, cumin. This is a kind of soup which is a great dish for winter. To make Rasam, you will not need many ingredients and much time if you have prepared the premix from the recipe given here.

To make rasam premix, you will need 1/4 cup arhar dal, 1 tablespoon coriander, 1/2 teaspoon asafoetida, 1 tablespoon urad dal, 2 teaspoons black pepper powder, 10-12 curry leaves (you can take more than this), 8-10 dry red chillies, 1 tablespoon oil, 8-10 garlic cloves, 1/4 cup dry tamarind (pulp will be required which is available in the market. ), half teaspoon turmeric, 1 tablespoon salt (can be skipped but then you will have to add it every time you make the soup). How to make this powder?

  • First of all, dry roast arhar dal and urad dal in a pan so that its rawness goes away. Roast the dal on very low flame while stirring for 2 to 3 minutes.
  • Now add whole dry coriander, cumin, black pepper and curry leaves to the dal and roast it while stirring so that the moisture in these spices gets released.
  • When all the spices and pulses are roasted well i.e. about 80 percent, then add dry red chillies and roast till it gets crunch.
  • Turn off the gas and leave this mixture of pulses and spices to cool and chop the garlic finely. This will make frying easier.
  • Add one spoon of oil in the pan and fry the garlic on low flame till it turns golden and take it out in a plate. After some time it will become crunchy.
  • Add the prepared lentils and spices to the mixer. Also add tamarind pulp and fried garlic, turmeric, salt and asafoetida. Grind it and make powder.

Keep this prepared powder in an airtight container and whenever you want to make rasam, you just have to fry the tomatoes in one spoon of oil for some time and then add this mixer, add water and boil well. Your rasam will be ready in a few minutes.
