Talking about winter food, maize dhokla is eaten a lot in Rajasthan. It has many benefits for your health, because its main ingredient is maize flour. Maize is also hot in nature. What ingredients will be required?

You will need 2 cups of maize flour i.e. approximately 250 grams. Apart from this, 1 cup fresh fenugreek leaves, half cup each peas, half cup green coriander, half cup curd, half teaspoon cumin, celery half teaspoon, garam masala one fourth teaspoon, a pinch of asafoetida, half teaspoon turmeric powder, half teaspoon red chili powder, 1 teaspoon coriander powder, one teaspoon ginger and green chili paste, oil 2 tablespoons, desi ghee 2 tablespoons, salt one teaspoon or as per taste. Apart from this, one fourth teaspoon baking soda will be required.

  • Keep water in a big vessel to boil beforehand. Later, a mesh plate will be placed on top of it, on which the Dhokhla is steamed.
  • If you have a steamer then you can prepare it, it will be easier for you to steam the dhokla.
  • Grind green chillies and ginger coarsely (one inch piece of ginger and two green chillies are enough).
  • Remove thick stems from fenugreek leaves and pick them so that no grass or particles remain. Wash it and chop it finely.
  • Also pick coriander leaves, wash them, cut them and keep them in a bowl. After all these preparations, you have to prepare Dhokla dough.

Take out corn flour in a big vessel, add celery, cumin, asafoetida, turmeric powder, garam masala powder, red chili powder, coriander powder, ginger and green chili paste (one inch piece of ginger and two green chilies are enough), coarsely crushed green peas, chopped fenugreek leaves, curd, salt, and tablespoon oil and last of all add baking soda. Now take lukewarm water, mix it with this flour and knead it. You have to prepare a soft dough. It should be a little softer than the dough used to make rotis.

After the corn flour is ready, apply oil on your hands and knead a little dough and make a round ball out of it and press it between the palms. Due to which it becomes slightly raised in the middle and pressed at the edges. Make a hole in the middle with your finger. This will look like South Indian Vada. Prepare all the dhokla in the same manner and keep them in an oiled plate.

Remove the plate from the hot water vessel and place a mesh plate on it and then grease oil on top. After this, put all the dhoklas one by one and steam it on high flame for at least 20 minutes. Check one dhokha with the help of a knife or stick. If it is cooked from inside then the dough does not stick to the knife.

Take out all the prepared dhoklas and serve with desi ghee on top. You can eat it with dal or chutney which tastes very tasty. If you are a fitness freak then you can reduce the quantity of ghee and oil as per your convenience. Apart from this, all the things added to Dhokla are rich in nutrients.
