Ingredients for Stuffing

Small potatoes (medium size) 6 to 8, Paneer (crumbled) 200 grams, Raisins, 2 tbsp, Chopped cashew nuts ¼ cup, Salt and black pepper as per taste, Green chilli 1 tsp, Garam masala 1 tsp

Ingredients for Gravy

Mustard oil ¼ cup, dry red chilli 2, cumin ½ tsp and ginger, cumin, coriander paste 2 tbsp, tomato puree 1 cup, turmeric powder ½ tsp, red chilli powder 1 tsp, kofta masala 1 tsp, cashew paste ½ cup, sugar 1 tsp, ghee 1 tbsp, garam masala ½ tsp, water as required, salt as per taste, coriander leaves for garnish.

First of all, wash and peel the potatoes thoroughly and then scoop out the middle of the potatoes and make a hollow and sprinkle a little salt and turmeric powder on it. After this, fry the potatoes in mustard oil, but keep in mind that they should not break. When they become light golden, take out all the potatoes in a plate.

Prepare the Stuffing

To prepare the stuffing, grate the cheese or crumble it with hands. After this, add chopped green chillies, garam masala, salt, black pepper, chopped cashews and raisins and mix well. Stuff the prepared stuffing thoroughly into all the fried potatoes. Now these are ready to make vegetables.

Paneer Stuffed Gravy

Heat mustard oil in a pan and prepare tadka by adding whole red chillies along with cumin seeds to it. After this add ginger, cumin and coriander paste to it. Fry it while stirring for two to three minutes. Now add tomato puree also. Mix salt, red chilli powder, two green chillies and turmeric and other spices. After frying it for a while, add cashew paste. Cook it until the oil starts separating.

Add water as per requirement in the prepared gravy and let it cook till it comes to two boils. After this, add the stuffed potatoes in it, within 7 to 8 minutes your gravy will become thick and the masala will be visible in the potatoes too. Now add one spoon desi ghee and garam masala, garnish each with coriander leaves and serve hot.
