Gram flour 1 cup

Semolina 2 tbsp

Curd ½ cup

Turmeric 1 pinch

Salt as per taste

Sugar 1 tbsp

Lemon juice 1 tbsp

Eno 1 packet

Add gram flour, semolina and curd and mix well. Make a smooth batter by adding salt, turmeric and a little water to it. Keep in mind that the batter should not be too thin or thick, otherwise nets will not form in the khaman. After making the batter, keep it aside for 10 to 15 minutes, so that the semolina swells and becomes spongy when steamed. Grease a plate or tray with oil. The food does not stick to this. Now before putting the khaman in the plate, add lemon juice and eno to the batter. Mix gently, this will make the batter fluffy.

Now immediately pour the batter in the greased plate and steam it for 10 to 15 minutes. To check it, put it on a toothpick and if it comes out clean then understand that the Khaman is ready, otherwise steam it for three to four minutes more.

To make the tadka of Nylon Khaman, heat oil in a pan. Add mustard seeds, then curry leaves and green chillies. Now add half a glass of water and sugar in it and let it boil well. On the other side, cut the prepared Khaman and cut it into square pieces. Now pour this tadka over it, so that it becomes soft and juicy. Garnish with green coriander and grated coconut and serve with green chutney.
