Only 2 ingredients are needed
Chef Pankaj Bhadauria has given the recipe of making mozzarella cheese from 2 liters of milk (you have to take full cream buffalo milk) and for this you will need the second ingredient white vinegar, which will work to curdle the milk. The method of making it is a bit like that of paneer, but in this you have to keep the temperature in mind. Let us know how.
How to make mozzarella cheese?
- First of all, keep milk in a big pan to heat. You just need to know its correct temperature.
- The milk has to be heated until it reaches 46 degrees Celsius. For this you can use digital cooking thermometer.
- If you do not have a thermometer, then just heat the milk so much that your finger can tolerate the heat for a few seconds.
- When the milk gets heated to this temperature, you have to add vinegar to it. Then stir it with a spoon so that the water separates.
- After this, cover the milk and cook it for at least 10 or 15 minutes. After this turn off the gas.

- Separate the milk from water and squeeze out the extra moisture, but it is not completely cooked yet because at this time it remains grainy.
- Now you have to put a pan on the gas and put the cheese in it and add a little salt. After this you have to cook it on medium flame while stirring.
- You have to cook chhena until it starts becoming smooth and stretchy. It will take you 5 to 6 minutes to complete this process.
- Now make it round with your hands and then dip it in ice water and leave it for some time. In this way your fresh mozzarella cheese will be ready.

How to store things?
Mozzarella cheese does not spoil and remains fresh for a long time. For this it is important that you keep it moist and cool. For this, you can dip mozzarella cheese in water in an air-tight glass container and then close it and store it in the refrigerator. You can keep it in a zip lock and put it in the freezer. Due to this it will not get spoiled for a long time.
