Ingredients to make Gulkand
You will need about 200 grams of fresh rose petals (keep in mind that they should be local roses), 20 grams of fennel, 5-6 green cardamoms, 150 grams of threaded sugar candy, 50 grams of almonds, 50 grams of cashew nuts, 50 grams of pistachio, 50 grams of honey, silver work (optional). How to make Gulkand?
- First of all, pick all the leaves from the fresh rose and take them out separately and after washing, spread them on a clean cloth. Dry the moisture by wiping with another cloth.
- Now put the threaded sugar candy in a mortar and grind it. In this way it will remain slightly grainy, which will make it easier for you to make Gulkand.
- Take out the ground sugar candy from the mortar and keep it in a separate bowl and now grind the cardamom along with the fennel well. Mix this also with sugar candy.
- Now put the rose petals in a big plate or dish. Also add the mixture of sugar candy, cardamom and fennel in it. After this, start mashing the petals with your hands.
- Actually, when sugar candy is coarse then rose petals get mashed in it quickly. You have to do this work with your hands instead of a spoon or ladle. Due to this, juice will come out from the leaves and they will be mashed well.
- When sugar candy and rose leaves mix well, add your favorite nuts to it, like cashews, almonds, pistachios. If you want, break these nuts and mix them or you can add them whole.
- After adding nuts, now add honey to it and also add silver work. If you want, you can also add gold work. In this way Gulkand will be ready.

You can keep Gulkand in a clean glass jar. If you store it in the fridge, it will not spoil even after at least a month. You can eat Gulkand with paan or it can also be eaten a little as a mouth freshener. Apart from this, Gulkand can be taken by mixing it in milk.
