Ingredients to make gooseberry marmalade:
Amla 500 grams, jaggery 500 grams, cardamom powder half teaspoon, black salt: half teaspoon, dry ginger powder half teaspoon, water as required
How to prepare Amla?

First step: First of all wash the gooseberries thoroughly and soak it in water for overnight. The next morning, remove the gooseberry from the water and make deep holes in every gooseberry with the help of a fork. This will eliminate the syrup inside the goals.

Second step: After that, keep the water in a large pot for heating. When the water comes to a boil, put the gooseberry in it. Allow the gooseberries to cook in water on medium flame for about 7 to 8 minutes, until they become a little soft. When the gooseberry becomes soft, take them out of the water and keep them in a separate vessel.

Third step: Now melt the jaggery in a pan. Cook it on low heat continuously, until the jaggery dissolves and a thick syrup becomes. You do not have to make a wire syrup, just become a little sticky and thick. Add boiled gooseberry to the prepared syrup. Now add cardamom powder, black salt and dry ginger powder and mix well.

Fourth step: Cook the gooseberry syrup for 30 minutes on low flame until it becomes thick. After some time turn off the gas and allow the marmalade to cool down completely. When cooled, keep this marmalade in an air-tight glass jar.
