Pickle ingredients
Lemon one kilo, sugar three loaf i.e. half a kilo plus 250 grams (can do more or less sugar as per taste) or you can use jaggery instead of sugar according to healthy option (we are telling the recipe of making pickles from jaggery). Coriander seeds two teaspoons, black pepper 10 to 12, one teaspoon cumin, two teaspoons of fennel, one teaspoon fennel, black salt, red chili powder, 22 teaspoons of gorge powder, plain salt, a pinch of asafoetida.

First of all wash the lemon thoroughly and wipe it with a clean cloth. So that moisture comes out. After this, cut all the lemon into 4 pieces and remove the seeds and separate it so that there is no bitterness in the mouth while eating pickles.
Now put all the chopped lemon in a glass vessel and add salt and black salt to it. Cover the prepared mixture and keep it in the sun for 3 to 4 days. Keep stirring once every day. This will soften the lemon.
Prepare pickle like this
After showing sunlight, check whether the lemon is melted or not. After this, melt the jaggery and add lemon to it. Also, roast all the whole spices and grind them coarsely and then add powder spices. Now the jaggery in which lemon has been added. In that, this prepared spice should also be added. Then fill this prepared pickle in a dried glass jar and tie it and seal it and show it again for 5 to 6 days. During this time, keep running in the middle of the pickle.
