How to make this hot Lemon Coriander Soup?

  1. First of all, fry the vegetables lightly. Add onion, garlic, ginger and green chillies and fry in hot oil. This will give great flavor to the soup. Then add carrots, peas and sweet corn and cook for 2-3 minutes.
  2. Now add some millet flour or cornflour. This step thickens the soup slightly and adds texture to it. Add a little water and mix well so that lumps do not form.
  3. Now add 1 liter water. Add salt and black pepper as per taste along with it. Let it boil for 5-7 minutes so that all the vegetables become soft.
  4. Make it more nutritious by adding paneer or tofu. Add paneer or tofu cut into small cubes. This makes the soup protein-rich and even more filling.
  5. Now comes the real stars – fresh coriander and lemon juice. After turning off the gas, add chopped coriander and lemon juice. This is where the flavor and freshness of the soup doubles.
  6. Add ½ tbsp ghee for finishing. Before the soup is ready, add a little ghee on top. Along with enhancing the taste, it also keeps the body warm in winter.
  7. Pour this hot Lemon Coriander Soup into bowls, sprinkle some coriander on top and serve immediately. Believe me, nothing can be more cozy than this on a winter evening!
