Ingredients of Lemon Cake
2 lemons (unprocessed or organic), 3/4 cup sugar (150 grams), 4 eggs, 1.5 + 2 tablespoons all-purpose flour (200 grams), 1/3 cup cornstarch (50 grams), 1.1/2 teaspoon baking powder (7 grams), a pinch of salt, 1/2 cup curd (125 grams), 4.5 ounces melted butter (125 grams), a pinch of vanilla essence, Icing sugar (optional).
For Lemon Syrup
3 tbsp water, 3 tbsp lemon juice, 3 tbsp sugar.

- First of all, you have to take sugar in a bowl and grate the lemon peel in it. Keep in mind that you have to remove the peel i.e. lemon zest from the fine side.
- After this, mix both the things well with hands so that the taste of the zest improves. After this, break egg into it and mix it.
- The egg has to be whisked with the lemon zest and sugar until it looks completely fluffy. This is the secret of making the cake spongy.
- After this, add dry ingredients like flour, corn starch, baking soda and then blend it with a blender.

- You also have to add butter, curd and vanilla essence and blend it. With this, a smooth batter will be prepared.
- Now take a cake mold, line it with parchment paper and grease it. Add the prepared batter into it and then tap it on the table two to three times.
- This cake has to be baked in the oven for 50 minutes. When you take it out, it will have turned completely golden brown which looks amazing.
- Check the cake with a toothpick. Pierce it deeply. If it comes out completely clean then the cake is ready.
- Now you have to make syrup in a pan. Take water for this. Add sugar in it and cook till it dissolves. Turn off the gas and add lemon juice to it.
- Pour the prepared lemon sugar syrup over the cake and then sift the powdered sugar over the cake through a sieve. In this way your refreshing, tasty lemon loaf cake is ready.
