Carrot Halwa Recipe
- First of all you have to prepare the carrots. For this, just wash and peel the carrot and instead of grating it, cut it into small pieces. The yellow part in the middle can be removed.
- Now put the carrot in the grinder and run it on pulse mode so that it gets crushed well, but keep in mind that it should not be ground completely, otherwise it will become puree.
- Now add desi ghee in the pan and fry the carrots while stirring for 4-5 minutes. This will remove the rawness of the carrots and will also give it a pleasant taste.
- When the carrots are slightly cooked, add 1 glass of milk to it, cover and cook for 10 minutes, stirring once or twice in between. It has to be cooked until it becomes thick.
- Put the remaining milk on the second flame so that it continues to thicken on low flame. This will increase the taste of your halwa manifold.
- If you want, instead of cooking it in a pan, you can put it in a pressure cooker and turn it on a whistle, due to which the carrots will melt quickly and the halwa will be prepared more quickly.
- Keep in mind that if you are using a cooker, do not grind the carrots, otherwise it will overcook. Cook it in pieces and crush it with a ladle.
- When the carrot milk dries, add sugar to it. At this stage, keep the flame on medium and stir continuously because after adding sugar, some water comes out which needs to be dried.
- Add chopped almonds and cashews to the pudding and also add raisins, cardamom powder and add the thickened milk to it.
- In this way, your carrot halwa will be ready in a short time, which will also have an authentic taste.
