The festival of Holi is a unique confluence of colors, enthusiasm and sweetness. As soon as the month of Phalgun arrives, an atmosphere of celebration is created all over India. But in Maharashtra the splendor of this festival is different. Here Holi is not only a day of playing with colours, but also an opportunity to add sweetness to relationships through traditional dishes. On the occasion of Holi, Gujiya and Malpua are made in most of the places. At the same time, in Maharashtra, a sweet roti completely different from this is made. It is called Puran Poli. This dish is the cultural identity of Maharashtra and has a special place in Holi.

Maharashtra’s Holi special ‘Puran Poli’

Be it village or city, making Puran Poli on the day of Holi is a tradition in almost every house of Maharashtra. Women start preparing for it several days in advance. Soaking the dal, melting the jaggery and cooking the stuffing properly. In today’s era, even though different types of sweets are available in the market, the taste and familiarity of homemade Puran Poli is not found anywhere else. Let us know its easy recipe.

Puran Poli Recipe

Material

1 cup chana dal

1 cup grated jaggery

1/2 tsp cardamom powder

1/4 tsp nutmeg powder (optional)

1 tsp ghee

1 cup all purpose flour (or half all purpose flour – half wheat flour)

1/4 tsp turmeric (for colour)

2 tsp oil

water as per need

How to make Puran Poli

To make Puran Poli, wash chana dal and soak it for 12 hours. After this, put it in the cooker and boil it until it becomes soft. The dal will melt well in 2-3 whistles. Now remove the extra water from the dal and mash it well. After this, add pulses and jaggery in the pan and keep stirring on low flame. When the mixture becomes thick, add cardamom and nutmeg powder. Add light ghee, mix well and let it cool. When it cools down, make small balls.

Now to make poli i.e. roti, take a vessel and take equal quantity of flour and flour in it. Add light salt and oil to it and knead a soft dough. Cover the dough and keep it aside for 20-30 minutes. Now make small balls and roll them a little. Just like you fill stuffing to make Aloo Paratha. Similarly, roll out the dough and fill it with lentil filling. Close the edges and roll gently. Cook on both sides on medium flame. Apply ghee on top and cook till it turns golden. Holi special Puran Poli is ready. Serve it with ghee, milk or amti (curry-like lentil).
