Protein Rich Momo Recipe
prepare the dough
First of all, filter the semolina and then put it in a grinder and grind it a little once. This will make it easier to make momo puris. Now put semolina in a vessel. Add a little salt, a teaspoon of oil, mix well and add lukewarm water little by little and knead a soft dough. Cover the dough with moist muslin or cotton cloth and keep it aside.
Prepare the Stuffing
- First of all, boil soya granules in water for 5 minutes or soak them in hot water. Then after it swells, squeeze out the water.
- Heat oil in a big pan. Add garlic and ginger in it. Fry for 10 seconds. Then add onion and carrot. Fry this also for some time.
- Now add capsicum, cabbage and soya granules, grate cheese. While stirring, fry everything for 5 to 8 minutes.
- Add salt, black pepper powder, red chili powder, soya sauce and vinegar to all the prepared ingredients (sauce-vinegar is optional). Mix well for about 2 minutes. Turn off the gas.
Prepare Momos
- Let the stuffing cool down a bit and in the meantime make small balls of the dough. The size of the balls should be kept according to the size of the momos you want to make.
- Sprinkle a little flour on each ball or grease it with oil and roll out a thin layer. Try to keep the edges thin and the middle a little thick.
- Add as much soya and paneer mixture as required in the middle of each ball. Fold the edges and shape the momo and close it completely.
- In this way, make all the momos one by one and keep them covered with a damp cloth, so that the layer does not become hard.
- Prepare the steamer and cook all the momos thoroughly in steam. Serve it with chopped onion and garlic-tomato chutney.
