Spinach – 250 grams Garlic pods – 2 tbsp Turmeric powder – 1 tsp Red chilli powder – 1 tsp Pickle masala – 1 tsp Garam masala – 1 tsp Vinegar – 2 tbsp Mustard oil – 1 tbsp Salt – as per taste Dry red chilli – 2 Five spices or five phoron – 1 tsp Asafoetida – a pinch

How to make Spinach Pickle

Wash spinach thoroughly and chop it finely. Peel the garlic and cut it into small pieces. Now take a pan and heat mustard oil in it. After this add five spices and dry red chilli. When the oil starts crackling, add asafoetida. After this, add finely chopped garlic, spices, salt, turmeric powder, red chili powder and mix well. When the spices are roasted, add spinach and stir well. After this add garam masala and pickle masala and turn off the gas. Now take out the pickle in a bowl and keep it at room temperature. When the pickle cools down, add 1 tablespoon vinegar and 1 tablespoon mustard oil and mix it. You do not need to keep it in the sun. This is an instant pickle recipe, which you can eat immediately after making it. This pickle lasts for many months and there is no need to make it again and again.
