The aroma of various dishes on Holi doubles the fun of the festival. Especially there is a tradition of making Gujiya and Malpua. Both of these are sweet dishes which taste amazing. In some places, the festival of Holi is considered incomplete without Malpua. People prepare and eat different things from carrots throughout the winter, while beetroot is also considered a very healthy vegetable of this season. You can give a twist to Malpua with this. Now that winter is about to end, making some carrot dish is definitely a must. In such a situation, you can make Malpua on Holi. In this story we will see the complete recipe step by step.
Holi festival is a special day to enjoy the taste along with colors. In places like Bihar, Uttar Pradesh and Madhya Pradesh, the charm of Holi seems missing without Malpua. In some places, it is served garnished with dry fruits, whereas in some places like Rajasthan, Malpua is eaten with Rabdi. Ingredients for Batter
You need 300 grams carrots, 50 grams beetroot, 1/2 cup milk powder, lukewarm milk (total 2 cups milk is used in this recipe), 1/2 cup fine semolina, 1/2 cup all-purpose flour, 2 tablespoons sugar, 1 teaspoon fennel, 5-6 green cardamoms (powder), 1/2 teaspoon baking powder, water as required.
for syrup
To make syrup for Malpua, take 1.5 cups of sugar and equal amount i.e. 1.5 cups of water. Apart from this, some threads of saffron and 5-6 green cardamom (powder) are required. For the recipe, you can use desi ghee or any good oil of your choice.
Malpua recipe
- First of all, boil water in a pan. On top of this you have to place a milk strainer or a steam plate.
- Peel the carrots and beetroot and cut them into small pieces. Place it on a steam plate and cover and cook until it becomes soft.
- When carrots and beetroot become soft, put them in a grinder and grind them. Add a little milk to it and prepare a fine paste.

- Now add milk powder and milk in a bowl and mix it well. This solution will be ready.
- You have to mix flour and semolina in the mixer with milk. A nice smooth textured paste will be prepared.
- After this, add some sugar to the mixture. Also add fennel and add one spoon of desi ghee along with cardamom.
- Now you have to beat everything by stirring it well with a balloon whisker. Now add carrot paste to it also.
- After mixing all the things, cover it and let it rest for at least an hour.
- After 1 hour, the texture of this batter will become quite good. Now add baking soda in it and then pour some water on it and stir it well with a ladle.
- Now heat ghee in a pan. Then reduce the flame to medium and pour the batter into the hot ghee with the help of a big spoon.

- Fry the Malpua until it becomes crispy on both sides. If its color becomes golden then it is ripe.
- Now you have to squeeze out all the ghee and fry all the maal pua one by one and take it out in the plate.
- Now heat water in the pan, add sugar, cardamom powder and saffron and cook till it becomes a stringy syrup.
- Dip fried malpua in syrup. Take it out after some time and serve it hot with dry fruits or rabri.
