Carrot Halwa is a favorite of most of the people in winter, hence in this season it is definitely included in the wedding menu from the confectionary shops. People also make carrot halwa at home, but if you have cooked carrot halwa then you will always give this twist to the halwa. Carrot Pak of Chirawa of Rajasthan is very famous, if someone eats it once then he will feel like eating it again and again and it will become a favorite of children and adults alike. Carrot Pak is made especially from fresh red carrots that come in winters, which has the taste of desi ghee, milk and dry fruits.

What are the ingredients required?

To make Carrot Pak, you will need one and a half kilo carrots, 1 cup sugar for sweetness, 1 liter milk, 2 tablespoons desi ghee, 2 teaspoons green cardamom powder, 15-20 cashews, 15-20 almonds, 250 grams dry milk or mawa, 2 tablespoons sugar separately, saffron (optional). Step by Step Recipe

  • Take all the carrots, wash them thoroughly and then peel them and grate them. This will take you some time.
  • Add the grated carrots directly to the pan. Turn on the gas and cook while stirring continuously until it becomes slightly soft.
  • Now add sugar to the carrots, when the sugar dissolves completely, then add 1 liter milk in it.
  • You have to cook carrots with milk until the milk starts drying completely and a thickness is obtained.
  • When milk and carrots are cooked, add two spoons of desi ghee to it. This will also give a good aroma and taste to the carrot pak.
  • After mixing ghee, also add cardamom powder to it. If you fry it while stirring for some time, the carrots will start leaving the pan.
  • Now take out some cashews and almonds and grind the rest and make powder. Mix this powder also in cooked carrots.
  • Now crumble the mawa and put it in a pan and heat it for some time. A little milk has to be added to it so that it becomes like a thick granular paste.

Carrot Pak Recipe

  • Now add saffron threads to it (if you don’t have it then skip it). Add some cardamom powder to it and add 2 spoons of sugar.
  • Now take a tray, spread butter paper in it and spread the carrot pak in it and level it with a ladle like barfi is prepared.
  • Spread the mawa (khoya) mixture over the carrot pak and garnish with chopped nuts i.e. cashews, almonds or pistachios.
  • Keep this carrot pak in the refrigerator. It gets set in one and a half to 2 hours, after which you cut it in the shape of barfi and serve.
