Today the festival of Dussehra is being celebrated, it is also known as Vijayadashami. This festival is a symbol of the victory of good over evil, this special day is celebrated with pomp across the country. Ramlila is organized in North India, in which the events of Shri Ram’s life are performed dramatically. The event lasts for about ten days and on the last day it is resolved with Ravana Dahan. At the same time, Dussehra holds special significance in the form of Durga Puja in West Bengal. There this day is called “Vijayadashami” and Durga idols installed in big pandals are immersed.

On the evening of Dussehra, everyone goes to see the fair and Ravana combustion. There is a lot of crowd in the markets. On this day, in the auspicious time, sisters tilak on their brother’s forehead. In such a situation, you can make some special dishes for guests and family members who come home on this day. Whose taste will be liked by everyone from the child.

Semolina balls

To make it, prepare a thick paste by mixing semolina, curd and some water in a bowl. Now add chopped vegetables such as onion, capsicum, carrot, ginger, green chillies, coriander and salt. Mix it well and keep it covered for 10 to 15 minutes, so that swollen swells. If the batter becomes very thick, add some water and mix. Now add baking soda or ino to it and mix immediately. Make small balls by taking a little mixture with wet hands. Now put some oil in the appm pan and keep a ball in every groove. Cover and cook from both sides till crispy and golden brown.

Moong Dal Chill Rolls

To make it, soak moong dal in water for 4 to 5 hours. Grind the soaked lentils in a mixer with ginger, green chillies and some water. Keep in mind that the batter should not be too thin or thick. Add salt, turmeric and cumin seeds and mix well. Heat 1 tsp oil in a pan. Add ginger, onion, carrot, capsicum or your favorite vegetables and fry for 2 to 3 minutes. Then add mashed potatoes, salt, chili powder and garam masala and mix well. When it is slightly cooled, add green coriander and keep it aside.

Heat non-stick griddle. Put ghee or oil on it. Now spread it by putting it on the batter pan. Fry on both sides on low flame. Place 2 tablespoons stuffing on the prepared scream and spread it in the shape of the rolling. Now roll the chill slowly. If you want, you can also cut it a little bit of the roll. Serve hot with green chutney, tomato sauce or curd.

Mix veg cheese cutlet

To make it, put mashed potatoes, finely chopped and boiled vegetables in a large bowl. Now add ginger, salt, red chili, green chilli, chaat masala, garam masala and green coriander and mix. Mix well and make a smooth paste. Now make a few big balls than this. Give tikki or cutlet shape. Keep it in a plate. Make a thin slurry by mixing maida and cornflour in a bowl.

Place bread crumbs in another plate. Now first immerse every cutlet in maida slurry, then roll well in bread crumbs. If you want, you can keep it in the fridge for 10 to 15 minutes. Now heat oil in a pan. Deep fry the cutlets on medium flame till they become golden brown and crispy. Remove its extra oil with the help of tissue. Serve it with green coriander chutney or any sauce.
