Whereas if it is filled with the sweetness of mango then it is icing on the cake. So let’s see the recipe of pudding made of Mango, Gond Katira and Chia seeds which is rich in taste as well as nutrition and no sugar is used in it, so you can eat it without any guilt. The recipe of this pudding has been given by Chef Aruna Vijay who has been one of the top 4 finalists of Master Chef 2023.

All the ingredients used in this mango pudding are rich in nutrients. Vitamin C and many other nutrients are found in mango, while Gond Katira protects from heat stroke in summer and is also an excellent source of calcium. Similarly, chia seeds are rich in fiber and also have a cooling effect. So let’s know the recipe.

You need Gond Katira 1 tbsp, Water 1 cup (for soaking Gond Katira), Chia seeds 1 tbsp, Water ¼ cup (for soaking chia seeds). Soak both these things for 1 hour or leave them overnight.

Ingredients for Puree

Ripe mango 1, chopped, milk ½ cup, honey for sweetness 1 tsp

topping note

For topping the pudding: chopped mango, mixed nuts, muesli, pumpkin seeds and chopped bananas.

How to make Mango Chia Seeds-Gond Katira Pudding

  • Gond Katira has to be soaked until it swells and becomes jelly like. It doubles after swelling.
  • Similarly, chia seeds also become jelly like after swelling and their quantity increases by at least one and a half times.
  • The third step is to mix chopped mango, milk and honey and put it in a grinder and then grind it to make a smooth paste.
  • Now add prepared mango paste, soaked gum katira and chia seeds in a bowl and mix gently.
  • Now you have to add toppings on top i.e. add mango pieces, banana slices, muesli, dry fruits and pumpkin seeds.
  • If you want more freshness in this pudding, then keep it cool in the fridge for half an hour and then serve.

If you find the pudding too thick then you can add a little milk to it. Although mango has its own sweetness, but a little honey improves it. If you want, you can use jaggery or dates instead of honey.
