Healthy Christmas Cake Recipe
Material
Dates (seeded) – 1 cup
Figs – ½ cup
Cashew nuts – ¼ cup
Almonds – ¼ cup
Walnuts – ¼ cup
Raisins – 2 tbsp
Desi ghee – 2 tbsp
Milk – as per requirement
Baking powder – ½ tsp
Cinnamon powder – ½ tsp
Nutmeg powder – a pinch
How to make cake
- First of all, soak the dates and figs in lukewarm milk for 15–20 minutes, so that they become soft.
- Now add soaked dates and figs in the mixer jar and make a smooth paste. If needed, you can add some milk.
- Coarsely grind all the dry fruits (cashew nuts, almonds, walnuts).
- Add date-fig paste, ground dry fruits, raisins, ghee and spices in a bowl and mix well.
- Add baking powder last and mix gently.
- Apply ghee in a heavy bottom pan or non-stick pan, add the mixture, cover and cook on very low flame for 35-40 minutes.
- Keep checking from time to time. When the cake is set on top and aroma starts coming, turn off the gas. Once cooled, slice and serve.
