Cardamom powder- 1/2 tsp
Fennel- 2 tsp
Water- as per need
ghee for frying

Thekua recipe

Step 1- Jaggery Solution

The first step to make thekua is to prepare the jaggery solution. For this, take a pan and heat some water. After this add jaggery in it and keep stirring till it melts. After the jaggery dissolves well, cool the solution, filter it and keep it aside.

Step 2 – Prepare the dough

The most difficult thing in making thekua is to prepare the right dough. For this, take a vessel and put wheat flour in it. Now add ghee to it, add grated coconut, cardamom powder and water and knead the dough. Keep in mind that ghee should neither be too much nor too little. Otherwise thekua will not become crispy. Now slowly add jaggery solution to it and knead the dough. Keep in mind that the dough should be a little harder than roti dough.

Step 3- Shape thekua

After applying the dough, now it is the turn to shape the theku. For this, apply a little ghee on your hands and take a ball of dough and place it on your palm. Now press it with the other palm. You can make many designs of your choice on thekua with a fork or spoon.

Step 4- Frying Process

After shaping all the thekus, keep them aside. Now take a pan and add ghee or oil in it. When it gets heated properly, add thekua. You have to fry theku on medium flame. This will improve its color and also cook it from inside. If you fry thekua on high flame then it may remain raw from inside.

Keep these things in mind while making thekua

  • Thekua flour should not be too hard or too soft. Otherwise the thekua may break during frying.
  • Always use lukewarm jaggery solution. Adding too hot batter makes the dough wet.
  • After frying thekua, do not cover it immediately. This makes the thekus soft and the crunch goes away.
  • Use only desi ghee or mustard oil for frying. This gives good taste and aroma.
