It is said that fried rice originated in Yangzhou, China by giving a new twist to leftover rice. Often when people go to restaurants and eat fried rice, they feel that they cannot get the same taste at home. You can also make non-sticky, smoky flavored fried rice at home, which will taste exactly like the restaurant one. Chef Pankaj Bhadauria has shared the recipe of not just one but three types of fried rice, which you can try as per your choice.

Veg Fried Rice Recipe

If you want to make fried rice for 3-4 people, then take 2 cups Basmati rice, 6 cups water, 1 teaspoon salt, 1 teaspoon refined. Take it. Now keep the water to boil and add oil. Wash the rice on the other side. Leave it soaked. When the water boils vigorously, add rice to it and then cook it till at least 80-90 percent. In this way the rice will remain in bloom. At this stage, filter the rice and spread it on a plate so that it does not stick.

Ingredients for Veg Fried Rice

Cooked rice cooled, 2 tbsp oil, 1 tbsp ginger, 1 tbsp garlic, 2 tbsp finely chopped onion, 1 tbsp green chilli, ½ cup chopped different vegetables like carrot, cabbage, green onion, french beans, mushroom, peas, baby corn, sweet corn… apart from this you will need 1 tsp light. Soy sauce, 1 tsp dark soy sauce, 1 tsp vinegar, 1 tsp MSG (Ajinomoto), black pepper and salt to taste.

First of all, heat oil in a pan and heat till smoke appears. Now add chopped ginger, chopped garlic and chopped green chillies and fry. Now add chopped onion on top and fry it for two to three minutes. Now add finely chopped vegetables and mix well on high flame so that they get cooked lightly and the crunch also remains. Now add cold boiled rice, sauce, salt, black pepper, Ajinomoto and mix well. Garnish with ring onion and serve hot.

Note: If you like chicken fried rice, then there is no need to do any separate preparation. Add half a cup of boiled vegetable fried rice in small pieces with light salt and toss it in the pan for some time.

Egg Fried Rice Ingredients

For this also, prepare rice in the same method and cool it. Apart from this, you need 2 tbsp oil, 1 tbsp ginger finely chopped, 1 tbsp garlic also finely chopped, 1 tbsp chopped green chilli, 2 tbsp chopped onion, 2 eggs, 1 tbsp light soy sauce, 1 tbsp chilli oil, 1 tsp vinegar, 1 tsp ajinomoto, black pepper powder, chopped green onion. Salt for garnish and as per taste.

Heat the oil till smoke point comes. Like the recipe of fried rice, add chopped ginger, garlic and green chillies and fry until aroma comes. Now add chopped onion to it and fry for 2 minutes. Now comes the turn of the main step i.e. break the eggs and add them to the pan and mix while stirring quickly on high flame. Now add cooled boiled rice, sauce, salt, black pepper and ajinomoto and mix well. Check that the rawness of the rice is gone. Now garnish it with green onion and serve it immediately.
